I really like the way that Fountain pens write, are there any recommended for drawing/inking? Most pens/brushes brands I've tried don't give as good as a line variation, either it's not crisp enough or not thicc enough. I've looked at Dip pens but I'd like something portable. Any recommendations?

Not sure, but Pilot pens seem to be great for drawing. I'll order this one and see how it gets.
UK brands are great too.
Unless it's specifically says it's a flex variant, most fountain pens are not going to give you much in regards to line variation. Regardless, Platinum Preppy fountain pens are excellent starter pens. Don't think they manufacture in nibs higher than medium, and keep in mind that their sizes are going to typically be smaller than western nibs.
Platinum Carbon & Sailor Nano Kiwa-Guro black inks are the GOAT black pigment inks. Expensive as fuck, but are pretty much markerproof & waterproof after drying (but try to wait for like a couple of hours or some shit before going at it). Noodler's Bulletproof Black is a good budget option for something that is at least water resistant. However, it doesn't get as black as the other two, and ink drying takes a lot longer. Be careful with inking stuff with that one so as to avoid smears.
