Why do 99% of all artists only stick to one style? Seems rather boring to me.

Are they scared of venturing outside their comfort zone?

A well developed and unique style act as your branding.

In terms of freelance (for illustration, at least), it is absolutely vital to stick to one single identifiable voice. Art/creative directors are risk-adverse. They don't want to hire someone where they can't be sure what will be produced. If an illustrator specializes in drawing XYZ, then an AD will remember them as such. This is why every successful illustrator sticks to one style. Don't take my word for it - check out interviews with art directors and established illustrators. They'll all say the same thing.

Also - it's not boring if you've spent years developing a cohesive style all of your own, influenced from a mix of your favorite artists & techniques.

Consistency is pretty important when you want to get people to recognize your work and find something that makes you stand out from the competition. Artists who work in the entertainment industry usually switch styles a lot though. Whenever necessary for a new project.

Problems and restrictions breed creativity. The most creative artists are usually the ones coming up with creative ways of solving problems that are presented to them on whatever commercial project they are working on. Hobbyists who can do whatever they want whenever they want usually are the ones who stare at blank pieces of paper all day and think tomorrow they'll draw this amazingly unique masterpiece that has never been done before.

Multiple styles =>
Artists can do multiple styles, they just don't want to. But those who do, usually end up as art directors or designers of sorts because they are more interested in visual art as communication tool that is used to solve problems (project). They are not expressing themselves through one particular style but through being able to pick perfect style for certain projects.

One stylers get hired by multiple stylers because they don't have time to be good at all the styles.

Could you please point me to an artist who uses a wide variety of styles and subject matter.

Because I have a hard time finding all of these supposed artists who mix their hyperrealistic output with abstract expressionism a la OP. Or the artists or who mix their Bekinski-tier edgelord dark and dreary work with cute fluffy rainbows.

Well, what you seem to be looking for are artists who draw random shit without any artistic consistency, vision or purpose, so no, I can't name any of those because even if they existed, that's not the kind of artist I would ever be interested in checking out.
