Do you always finish your work or do you start over when you are not happy ?
I spent time on something but i don't like it anymore, I don't want to bother finishing it.

No
Leave it in "unfinished folder", come back to it in a year or something, fix it, remake it or delete it then.

I spent several days to do something quite simple but i fucked up and it's impossible to fix.
I'm redrawing it again and so far i'm going a much btter start; i haven't spent a week to do he pencil work because of lazyness, I did it in a couple hours

It depends.
It's completely normal to not be happy with your studies; you just have to push it through.
Personal pieces that are done for fun, should be fun; when they're not, then there's nothing wrong with abandoning them.
Finally pro work that is made to get more fans or as commissions - I work on them until I'm happy with them or they're done. Otherwise I wouldn't make as much artwork as necessary.
I try to push through when I'm not happy and call it done when I'm happy with it usually, but my works still usually look kind of rough and unfinished when I'm done. Most of my drawings take me between one and two hours, I'd probably benefit from an extra hour or two of polish.
Still, I used to scrap pieces all the time if the sketch didn't turn out as I wanted, but I found that to be unhelpful and kind of paralyzing. Nowadays I keep finnicking until I fix it, unless it's so drastically fucked it'd be quicker to start over.
