Smybol drawing is basically drawing a mental representation of a thing rather than what is actually observable (or feasible), and disregarding things like form. In beginners it usually means doing shit like like this.

Read the one stop beginners guide in the sticky. Symbol drawing is when you're just drawing what's in your imagination without knowledge of how forms in reality work (anatomy, perspective, etc) Thus it's just a "symbol" of what it's supposed to be, not a convincing illusion of 3 dimensional form on a 2d paper/screen.
