That specific helm is an SCA baton combat helm, but that said, grotesques of both ornate and practical forms have existed throughout history.

Obviously, the more ornate ones were purely for parade or tournament, but there are some that made it to battle.

Also, of course this armour served a purpose during his time. In the early 16th century, full plate armour was still commonly worn on the battlefields and in tournaments.

Depending on the time, you might be surprised. Gross anatomy was for the most part a mystery to people for a long time due to the religious powers that be tended to not allow most people to open up cadavers. Grave robbing for bodies was a pretty common thing for universities and hobby-scientists to do. For example, Michelangelo and Da Vinci were groundbreaking in their knowledge of anatomy as far as artists go because they got a pass to do so.
