Much of the population in the North China plain grew wheat, also intensive agriculture of any sort requires a great deal of cooperation between the population. This meme might not be all that relevant.
Maybe some crops were less reliable than others, more difficult to store for long periods, more prone to drought, resulting in more famines. Some crops like olives require years to grow or large investments in infrastructure, which has to be protected, possibly changing the attitudes of the population making them favor peace and security. This may have been significant. Maybe some crops were deficient in certain nutrients, though this is probably not as important.
There certainly was a big difference between pastoralists and farmers. The risk of cattle raids and being constantly on the move probably meant peasants were more difficult to control.
