Why didnt the Austrian-Polish coalition continue to push the Ottomans out of the Balkans after the Siege of Vienna. Would it not have been in their own self interests to fully smash the Ottoman army and establish balkan buffer states, perhaps driving them across the straights altogether?

Short answer, War of Spanish Succession redirected Austrian attention away from the East and pushed them West. While you had some pushes in, Belgrade in 1718, much of the Balkans were left in a power vacuum, allowing the Russians to take hold and play the great game.

Depends. For Austria, maybe. For Poland, not really. Without the Ottomans the Austrians could become the new hegemon in the Balkans. But at the same time Poland would lose a potential ally or counterforce that could distract Austria and Russia if either every turned on Poland.
Which they did.
