Taxonomy is a social construct. The point at which, for example, a reptile became a mammal, is irrelevant to the fact theres a big difference between reptiles and mammals today. Evolution is gradual.
Classically, humans would stop being humans once breeding problems occur. Neanderthal man, for example, was a human, and homo erectus was probably human; beyond that, maybe not so much. Though, the common ancestor of chimps and humans might not have difficulties breeding with chimps or humans.
