What are some great sources to learn about Vikings and Viking Culture? Been overdosing on Amon Amarth.

I'd say it depends on what material you're willing to go through, since most of, if not All the litterary sources are heavily influenced by Christian scholars and society.
"Age of the Vikings" by Anders Winroth for a broad, general overview of the Viking Age and Scandinavian social structure
"We are our deeds" by Eric Wodening for a (extrapolated) look at Pagan Germanic (including pre-Christian Norse) ethics and morality
Hurstwic dot org has a lot of broad, shallow articles on different Viking Age stuff. They're a bunch of HEMA LARPers but they support a lot of it with existing scholarly articles, saga evidence, and play around with a lot of props and reconstructions.

Don't get me wrong, reenactors and historical RPers can help gain insight, and the people at Hurstwic do some cool stuff: they've rowed on a reconstruction longship, they've spent some time in reconstruction longhouses, they've riven hafts and planks and forged iron using era-appropriate gear and all of that can do a lot to support or add context to existing evidence.
But at the same time I feel like people put too much stake in that stuff. You can approximate those techniques and ways of life, but you won't be able to create something entirely accurate, either because you've had to make assumptions somewhere, or because you've taught yourself to do something in a way that makes sense to a modern person or historian, but doesn't reflect what the people you're reenacting actually did. Just because you rowed a boat or made porridge in a soapstone pot doesn't make you an expert on Viking Age sailing or cooking, but lots of people seem to.
