The only people they had defending it were unmotivated Romanians and Italians with shitty equipment and little anti-tank weaponry to speak of, and what little they had was insufficient

The Germans had completely insufficient air power throughout most of the war, especially on the Western Front, but still held on.

Well, it's not like they had troops or equipment to spare. They created a huge, huge salient with the advance through the lower Don, and the Soviets can attack along any part of it really. It was pretty inevitable that somewhere would have soft defenses.
