Iran didn't become majority Muslim until the 11th century, about 4 centuries after the Islamic conquest. Basically, Iranians starting converting to Islam when they were given prestigious positions during the Abbasid era. Iranian aristocrats, wishing to maintain their titles and lands, were incentivized to convert to Islam, and by doing so, many Iranians followed them.

Umayyads actually hindered Iran's conversion to Islam. They had policies to keep Iran non-Muslim so its inhabitants could continue paying the jizya tax. This all changed when the Abbasids came to power. Iranians played a huge role in the Umayyad's overthrow, and as such they were given many positions of power in the new empire.

This. A dhimmi paid jizya and kharaj, amounting to like 40% of his income. A muslim paid only ushr, 10% from land, zakat, 2,5% of income over a certain quota, and khums, 20% of war spoils. Obviously this was a good idea in times of war, when you were expanding continuously, but when expansion stopped, spreading islam among your subjects actually harmed your tax income.

This was alleviated by extending kharaj to certain classes of land, regardless of who owned them. But by the Abbasid era everyone realized it was harmful to convert all of your population.
