If you're serious, it's because the Roman Empire carved out the largest continuous empire in Europe the world had ever seen, with unprecedented longevity and had cultural impact on Europe after it fell. Being recognized as a continuation to the Roman Empire (whether by blatant and continuous propaganda or reconquering Rome's old territories or by being the Byzantine Empire) earns tremendous amounts of prestige and would land the rulers an everlasting legacy.

Because it was seen as the universal empire, which was arguably true in Europe since it had been the first large unified state in that area.

It was just the political ideology of universalism and rightful rule based on precedent (admittedly Byzantium had direct political continuity too that was never completely interrupted until the end). Even Byzantine attitudes towards Rome and claims of universality changed from time to time and third states like Bulgaria, Serbia and the like contested that sort of ideology often.
