Pretty sure that happened all the time in the late Roman times. Heraclius at Nineveh for example or that gothic champion in the meme image of the ostrogothic wars.

Armies still clashed afterwards though.

PS: good thing I checked, the Heraclius duel at Nineveh was most surely a fabrication of historians that wanted funnily enough to add a 1 vs 1 akin to the illiad to make his story more epic.

China has a shitload of these in its history.
Obviously it was for morale though, not a single combat deciding the whole thing.
