I know that "Medieval latin" technically isn't a single language, but Anglo Medieval Latin is easier to grasp than pure Latin

It seems Medieval Latin is specifically what you want to use, but most methods to learn Latin involve going back to Classical Latin.
Vulgar Latin is where it's at.
