Because its safer. At first it was easier to hunt in groups, defend and care for each other in groups. Its better to be under a King than dead. A Kings job is to protect you from other assholes.

No the reality is a King would want to protect his people. Without you and your taxes a King has nothing. That doesn't mean he would risk his entire Kingdom to defend a small part of it. People that fight for a King do so to help protect their own possessions or they are being paid to fight.
