Tell me about since apparently the Japanese had melee fights against the Chinese

Yeah, banzai charges worked reasonably well in China, which lacked heavy automatic weponry. They actually worked well enough to make it into official tactical doctrine. They worked less well against Americans, as you would imagine.

are there any recorded duels?

even bolt action rifles easily BTFO banzai charges.
Reminder that the Marines were slow to adopt the Garand because lol Marines small arms budget. Guadalcanal was fought primarily with the M1903, and they BTFO multiple banzai charges in that campaign.
All you need to stop a banzai charge is good marksmanship and discipline, of which the Chinese had neither.

Correct. Bayonet charges were already obsolete since the late 19th century. The Chinese Army shouldn't be taken as a benchmark of modern tactics.
The Chinese military was so poor and technologically backward that they supposedly had many units with crossbows and spears in WWII. In that type of fighting, it's not unreasonable to use a katana.

Swords or melee weapons weren't really used for fights, they were mostly for executions or if you got disarmed or desperation but did see some combat usage in China because the Chinese often used rushing charge attacks which brought them into close quarters. The Japanese swords in ww2 were mass produced and often low quality.

Bayonets still had a few very limited uses, mainly in terms of helping to corral POW's in areas where actually firing a gun would be dangerous because you'd likely be hitting somebody on your side.

military kendo in wwII was a more aggressive and less regulated version of what is practiced today.
Stabs to the dou were practiced, as was grappling, and they were encouraged to hit and drag through when they cut.

But the army found that the standardize kendo did not prepare men to use an actual sword. The Toyama military academy brought in several master swordsmen including the famous Nakayama Hakudo who designed a curriculum based on classic iaijutsu to give soldiers familiarity with using a real sword. While the original Gunto soho isnt really practiced several groups preserve its techniques in various forms such as the toyama ryu and nakamura ryu

The tactics on both sides were basically charging in, taking them by surprise and slaughtering them

The Chinese suicide bombing to destroy tanks was cool though.

Not just the Chinese https://martialartsnewyork.org/2014/11/02/historic-world-war-ii-footage-of-filipino-martial-arts-training-with-bolo-knives/
I wonder if this was the first time Kendo and Escrima battled

There were a few duels during the russo Japanese war, though if it was with a literal samurai the guy would have been pretty old for front line duty, or a mere baby when the rank was abolished.
interestingly most japanese officer at the time used sabres in imitation of European armies, though many of the sabers had Japanese style blades.
