Especially in medieval/ancient times, I'm really curious about how long a battle would last. I imagine one between a few thousand men on each side would be over in maybe half a day? But what about the great battles where you have tens and tens of thousands of solders? Did those last for multiple days? How and when did they drink, sleep, eat, piss and shit? Were the ancient numbers just really really inflated so there wouldn't have been actual tens of thousands?

Battles were usually a few hours or less, consisting of troops engaging each other back and forth intermittently. Close combat is incredibly exhausting, and sustaining such for a long period is incredibly unlikely. It's only the advent of modern weaponry that battles (due to their long range nature) can go on for days.

Battles typically did not last very long, even ones involving immense numbers of people. The reason is that battle was physically exhausting back them. Fighting with swords, spears, and shields is a very intense ordeal. The human body simply cannot sustain that level effort for very long. Also, you didn't have things like land-mines and snipers to slow down the pace of battle.
