In the Ottoman Empire white slaves were the most expensive of slaves, with virgin, young, pale, European girls being worth the most and the equivalent of 1000 pounds of meat. The Sultan personally had a harem dominated by his favorite slaves, which tended to be of Circassian, Balkan and Levantine origin. These women tended to be favored for their intelligence and the Sultan would pick one to birth the new Sultan. Progressively the next Sultan became more white" as time went on, and the mothers would exert copious amounts of influence on their children's actions, almost directly.
White male slaves had a more diverse set of roles; while some did farm work for nobles, usually consisting of a rather relaxed working schedule and semi-generous conditions, many came into the employment of the Sultan himself. The Great White Eunuch(official name btw) and his counterpart, the Great Black Eunuch, presided over the hundreds of black and white eunuchs who worked for the Ottoman government. White slave eunuchs tended to be employed in statistical, diplomatic and more required fields while black slave eunuchs increasingly were given parts that were closer to the Sultan, such as being in charge of the harem, one of the most important pieces of the grand Ottoman puzzle.
Finally, white slaves in the Ottoman Empire have their most notable roles; as Janissaries.
Trained from birth by force, they became the feared backbone of the Ottoman conquests and were employed as far up until the 1830s.
Though not often neutered, they were forbidden to have families and the increasing pressure to have families lead to their dissolution.
European children were kidnapped from their village in place of taxation and occasionally at random and imo found greater purpose then getting raped in the backwater of Europe.

so in a sense the ottomans were brutal not merely because of whichever basic reasons a empire might want or need to be brutal, but because the notion that someone opposes or resists didnt realy mean the same thing to them as it did to say, mongols or brits
the thing they acted most violently against wasnt open armed opposition, political or economic competition or even failure to obey, even if these were brutaly supressed and punished also, but the thing that they treated with the most abject terror and atrocity was defiance, to them resisting was a failure to accept submission when offered, and that simply did not compute, maybe it even scared them, it was almost a way to hack the system, like what would happen in half of istambul simply decided they would rather drink coffee that day than submit to the sultan, what does a sultan do, impale them all on hooks in the street?
incidentaly one frequent characteristic of mentality or temperament of many populations, in the balkans, central asia and middle east, is exactly defiance, sometimes foolish, strongheaded, sometimes even suicidal defiance
