some parts, especially the frauenkirch, look authentic and wonderful and beautiful.
other reconstructions look like cheap barbie doll houses, or disneyland versions of the beautiful buildings which once stood there.
its still very picturesque when looking across the elbe though, especially in winter

there is no "they"
each plot, sometimes each individual building in a plot, are made by different companies and builders. that's why there is so much variation, both in style (new vs. modern) and quality.
there aren't really any with 100% accurate construction, obviously it would be too difficult to try to find the EXACT methods and formulas and materials used anywhere between 200 and 400 years ago. also obviously living requirements (e.g. need for plumbing and electricity, no need for servants' quarters) and social divisions (higher standards for what can be rented as a habitation) have changed in the city and in european culture in general. technology has changed too, in the 19th century a lot of the old baroque and renaissance buildings were in poor condition because the materials were degrading. so sometimes they replace certain types of stone, plaster, roof tiles, etc with more modern and longer-lasting types, which look more or less the same. in most cases the buildings have modern interiors, and modern construction methods such as steel framework, glass, and modern concrete rather than stone. usually if there is a reconstruction its just the facade, ground floor (and often the basement which sometimes survives from the war), occasionally the inner courtyard as well.
even with the differences though, the more historically accurate buildings use high quality materials and look beautiful.
the real problems are the investors and companies who want to be "cheap asses" and basically build cardboard utilitarian housing blocks to take advantage of high demand rent in the city center. the irony is that the historical reconstructions are part of the reason that the Altmarkt is being revitalized in the first place !

also, forgot to mention, while you might not notice the things I listed above, you WILL probably notice that:
1) the roof tiles in old photos are brown/black/very deep blood red, while now they are this bright scarlet red. this is simply natural aging. so for example in year 1650 a building was built, it would have the same bright red roof as today. in 1700 or so, it would be more brown and usually remain that way unless extensive repairs were needed.
2) the facades have more "texture" in old pictures, because the plaster was patched up over the years and the paint pigments were not as strong and long-lasting (pre industrial revolution). also, rain-streaks under windows are prevalent. in modern times tastes have changed and people tend to favor clean, spotless plaster when possible.
