The problem is what happens after you do that.

All of the nobles in the entire area gather an army 10 times the size of yours, filled with hardened professionals to your poorly armed citizen's militia.

They'd sentence you to the most horrifying and cruel death that they could come up with as the price of treason, just to send a warning to other would be revolters.

They weren't uncommon. In Germany you even had a massive widespread revolt in 16th century.
However, broadly and generally speaking, feudalism wasn't so brutal or oppressive like memes tell you.
For reference, watch some video where HEMA dudes recreate armored combat.
Armored, trained combatant is awfully hard to kill. Peasants lacked access to proper weapons, armor and training. Chance of peasant revolt succeeding was slim.

Somebody explain to me why strikes weren't common

This wasn't in medieval Europe but a Yucatan peasant rebellion failed because all the peasants had to go back to their farms to tend to the crops when they were on the brink of success

It wasn't easy, but it wasn't ''pure hell non-stop work'' either. Peasants had plenty of days off (religious reasons), and when crops are planted till harvest only work was maintaining your plot and house, and maybe fishing and hunting occasionally, or taking care of animals.
As this other guy said, it was a hard work, but average peasant worked a lot less than you do.
Of course, life back then was different and all sorts of calamities could happen, but that's a different subject.
Keep in mind I'm talking about peasants in general, in Western Europe.

Limitations in crop yield, bad earth rotation and the manpower needed to harvest is far bigger limitations than how harsh the work is.
You are talking about a society where mortality is the main driver of population and expansion.

They were pretty common on the territories of ex-Yu countries. Some really big ones too. The biggest one in present Slovenia happened in 1515, with ~80000 peasants fighting for 5 months and even besieging castles. But they all pretty much achieved nothing, ranging from a few days to months but in the end the lords always managed to brutally surpres them. If it came to that, then the villages from where the rebels came from were taxed even more. Or in a few cases, the Turks raiding nearby did a little detour to go kill some peasents.
They had a shitload of reasons too. Too high/unfair taxes, bullshit new taxes, disgruntled by the lack of promised protection, bullshit new laws, the lords putting themselves above the various kings and emperors of whatever country they were in, lords ignoring their demands (like to allow them to sell surplus crops or their handywork in nearby towns), etc.
Though I can't remember a single revolt that was meant as an outright revolution in present Slovenia, or at least it's never mentioned in high school classes. They mostly just wanted bullshit laws/taxes reverted back, not freedom from their lords. The closest I can think of is the Slovene-Croatian peasant rebellion (the one where the captured leader was sat upon a mock throne and a heated iron crown placed upon his head, then also quartered just for good measure) demanded that they pay their old taxes directly to the emperor of the HRE/Habsburgs, with no serious change in their societal status.

I don't think anything like ever blocked my forefathers and foremothers.

On my mothers side they were robbers and warriors up until 1400 and somefew all the way to the 1500 and then virtually all settled as farmers (and pochers).

On my fathers side they were warriors from the battle of lutzen up until the wwii, my second cousin was a battallion commander in the first battle with the russians at suomosalmi in the winter war.

No knight could have ever blocked the way of any of my forefathers and gotten away with their life.
