Might be obvious but Tacitus' Germania is invaluable if you read it aware of his biases and social context.
The romans were the first literary culture to really have prolonged interaction with them unfortunately the Eddas have passed through too many hands. Saying that though I think the poetic is the best as more real stuff slips through and some of it has been corroborated with fragments of runic inscriptions and older parchments unlike the prosaic Edda.
