They look cool, and that's important in an environment as emotionally charged as a battlefield. It's like the masks and armor of samurai that make them look like onis. In the heat of close combat on a sprawling battlefield, seeing some fucker with wings riding down on you like an angel of the Lord could cause you to panic, or at least hesitate for a fatal second.

They are a symbol of Poland (the white eagle) and were a source of patriotism say others

They were distinguishing marks that let the enemy know that the undefeated polish heavy cavalry were about to charge them (more psychological stuff) say yet more

I think it was a combination of all of these, also they look really cool.

Scaring enemy horses. Horses are very skittish by nature, and you have to train them to not panick against every damn thing.
Scarring people - Again, every human will instinctively consider "bigger human" as greater threat. Cavalry charge is scary on it's own, but wings could further intensify it.
Deceiving enemy about numbers - most of the time Polish army was outnumbered, so wings could trick enemy into believing that there were more soldiers than it really was. They also used similar tricks with lances, by just sticking them into ground.

As for the reasons:
Casualty rate for winged hussars was laughably low.
Service in Polish army wasn't mandatory. If any noble had problems with heirs, all he had to do was not to volunteer.
In fact, it was quite the opposite, and Polish army started to rely on winged hussars to much, and that ended in few lost battles. For example in battle of Warsaw they were left without any support.

Attacking fortified positions for few hours, while being vastly outnumbered is not something
