It's not a theory, Khazars converted to Judaism and had relations with Byzantium, you can go read about it in the historical records.

Khazars and Byzantines were allies for awhile, at one point a deposed Byzantine Emperor went fled there, married a princess and was given miltary support to retake the throne in Constantinople.

Later in history, the Khazars were in decline, the Byzantines and Rus allied together, the Rus destroyed the Khazars.

Yiddish is actually the biggest hole in the Khazar theory.

No turkic influences, yet there are Latin, Aramaic, and Hebrew influences which adds onto the idea that they are Jews from the Roman Empire.
