I'd start with these authors: Diego Duran, Sahagun, Diaz del Castillo, Clavijero, Juan de Torquemada, Hernan Cortes' letters to the King of Spain, and the accounts of the Anonymous Conquistador. For some native writers, for perspective, Chimalpahin, Popol Vuh, Codex Chimalpopoca, Annals of the Cakchiquels.
From there I'd look into John Pohl, Michael E Smith, Robert Sharer, Camilia Townsend, Nikolai Grube, and Stephen Houston.

Also forgot Alfonso Caso, he translated the codex Nutall, which is a precolumbian book dealing on the epic of 8 Deer Jaguar Claw, the Mixtec king who unified the Mixtecs and forged an empire.
