Basically, Judaism sprung out of Caananite polytheism and only very gradually became monotheistic, after a significant henotheistic phase. But the mythology is too wrapped up in other gods that ran around and did shit, even after retconning Yohwah into the supreme deity. Solution? Those other supernatural forces aren't' REAL gods, they're just divine servants of the REAL god!
Then Christianity came along and ran with the same concept.
