The letters thing was never mentioned anywhere else besides that "documentary". Neither was the supposed list Titanic had.
Aside from interior furnishings there were other differences:
-Different Bridge wings, with Titanic's extending more over the side for better visibility(See the attached image. Olympic is on the left and Titanic is on the right)
-Layout of the superstructures (Olympic had two promenades on A & B-decks, Titanic had one on A-deck with the other on B-deck being turned into enlarged staterooms and and the Parisian style cafe)
-The changes to the superstructure made the window appear randomly spaced on Titanic, they were evenly spaced on Olympic since it was an open area

Those are some of the easiest identifiers for the two ships but there were also differences on the inside in terms of the locations of some amenities, such as the Turkish Baths, or in size.
They are two different ships and to make Olympic identical to Titanic would take a lot of time and money. It's not just throwing down some carpet and changing painting over the name.

Smith was put in charge of Titanic because he was an experienced Captain and knew how to command a ship that large. The previous incidents did not change that, especially when the only major one was a collision where the Captains on both RMS Olympic and HMS Hawke played a part in the accident happening.

You're still not telling me why a ship would be sunk for insurance reasons when you would have to put even more money into the ship to change significant features, install rooms, and other stuff.

Both ships were built. That means their layouts could not be changed without extensive rework.
Titanic had features that Olympic did not.
To disguise the Olympic as the Titanic you would need to add things, and to disguise the Titanic and the Olympic you would need to remove things. All of this would take a lot of time, work, and money.
The entire theory the ships were switched falls apart when you realize this.

They were never swapped and the photo of Olympic has to be from 1910-1912 because she still only had her original sixteen lifeboats on the boatdeck. After Titanic sank more were added across the length of the boatdeck.

Olympic had a noticeable list to port after her collision with HMS Hawke. After the collision, "Olympic" went for sea trials for 2 days, including multiple runs at full power. "Titanic" later went for sea trials, which lasted only one day and ran at only half power. Survivors aboard Titanic mentioned a noticeable list.

I think the real Titanic is sitting on the bottom of the ocean but its really weird, the conspiracy doesnt seems that crazy

I myself am not sure for the change with the bow portholes but there must have been some reason. Probably something learned from Olympic and factored into the still in-progress of being built Titanic.
