Given that they were usually found on armour made for tournament combat on foot they probably served the purpose of providing additional defence while at the same time mimicking the fashion of the day. How common they were is a different matter though as both armours (>>2714253, >>2714269) were made for kings while >>2714278 is generally classified as costume armour that primarily served civilian purposes.

Yes, to be more specific, a 12th century Roman Soldier, the biggest giveaways are the use of the riveted lamellar, the scale neckguard (Which is debated, as many interpret the neckguards depicted in Byzantine Imagery as thick padding), and of course the Greek symbols on his tunic.

Holy shit those are awesome. Reminds me of the character design in EYE: divine cybermancy. I was gonna try to make a set of Lorica Squamata but to hammer all those scales would take ages, so maybe a cav mask like those would be a better place to start.

I love the story behind this one - it had to be rapidly altered for the king due to some tournament rule change (or wasn't mentioned at the time)- and that meant a lot of originally planned detail had to be scrapped.
That's why you only have the roses on half the plates, and if you look at the back of it, you see where someone accidentally ruins the makeshift pattern with one too many etched platelets.

The more you look at it the more details pop out to, like the engravings of saints and a collar on the pauldrons and breastplate. The plates on the couter and visor are shaped and engraved like scales, possibly to make him look like a dragon? In addition to the wrong pattern on the skirt some of the other engravings are rough too, obviously done in a rush.
