after that they reformed their language, they replaced cyrillic with latin(similar to the italian writing system) and a huge part of the slavic(and maybe other) words were replaced with french, italian and latin words

There is material evidence, city names etc.
Also the number of bulgarians is debated. Apparently there were enough people to form 2 states. There's historical evidence of the Bulgarian state under Omurtag negotiating with the Franks over territories, so they shared a border.

Later the slavs living in those areas weren't all that different from the slavs living south of the Danube. A lot of modern day Romanian cities have slavic equivalent names. The state had religion, it had alphabet, it had language to unify the people somewhat.

And of course, what was Bulgarian back then depends on the period and on definitions of nationality. Since nations really arose much later.
