Even assuming that agriculture was a mistake, being a serf sounds better than a modern wagie.
They didn't care as much about demographics in the new world because they viewed it as a distant problem that someone in the future would have to deal with.
Pagan Europe had tons of slavery. Christendom did away with it. Serfdom was just a logical part of the social order at that time. Work for protection.

Assuming you mean 'back then', because mass/chattel slavery was only viable in high-volume cash-crop operations in the New World. Otherwise serfdom was preferable (up until the mid 16th century in most of Western Europe; obviously much later in Eastern Europe) because serfs feed and care for themselves. Owning slaves is actually a net loss, and was a 'luxury' only nobility could afford for a long time.
By the time of the industrial revolution, slave labor had mostly ceased to be profitable, and was only used where indentured servants were unavailable. In every case voluntary labor is more profitable than involuntary.

The Americas had a very low population density. Especially after most Native Americans died to flu and smallpox.
After the arrival of the first few slaves, Malaria, Yellow Fever and other mosquito-transmitted diseases rampaged throughout the Americas and became perennial due to also afflicting local fauna. Africans are very resistant to these diseases because of a mutation in their blood cells.
