What could Venice have done to prevent this? How would Venetian state influence Italian unification in XIXth century?

Venice was small fry by the 19th century and could probably be described as "Sickman of Europe" akin to Turkey a century later. The only way I see Venice not being annexed is by switching sides and kissing up to whoever is winning. If Venice did survive into the later 1800's during the Risorgimento then it would have probably been taken by Sardinia just like Naples and other parts of Italy.

Nothing really. Both sides of the conflict were extremely keen to get their hand on the politically flagging, but still economically prosperous Serenissima. Avoiding the war completely was also not a possibility due to being sandwiched right between the two main powers. Maybe they would have had a chance to survive if Napoleon kept the Republic for himself instead of signing it over to Austria. That way, the venetian state could have possibly be restored at Versailles like all other small nations trampled by Boney. Whereas of course there was no way that the winners would force one of their own to relinquish land, no matter how illegal the take over was.

It would probably have either stopped it, forced it to happen in a federative fashion, or caused a new continent wide conflict by proxy.
Stopped it because unlike Naples, there's no way Venice could have been brought down by a combination of rebelling farmers and nobles bribed.
Federation because italian unification was a fairly widespread feeling throughout the peninsula, so that was still likely to happen, but the unitarian state basically only happened because the Savoia went around conquering the peninsula, most people wanted a federation.
Alternatively, it would also be very possible that Venice would just be bypassed entirely. The locals at the time (well still now kinda) considered themselves Venetian first, and the Savoia had no qualms proclaiming the italian kingdom even before actually annexing Veneto.

I doubt Venice could withstand the political maneuvering of Piedmont. They would've been boned just like the rest of Italy except for Corsica.

Piedmont's political strength came from the backing of France and Britain, and the backing was caused by Piedmont being the only real unification candidate. It's not a given that both countries would still back Piedmont, or even unification at all (after all no austrian Lombardy-Venetia means no undue german influence in Italy), and it's not a given that other european powers wouldn't back Venice to counterbalance the situation. Not to mention that Venice could easily be completely bypassed by the unification process anyway.
There's also the fact that italian support for the Savoias was really only due to them being the only state anywhere near strong enough to kickstart unification, but otherwise they really weren't all that liked, because they were very authoritarian and aristocratic, and they went out of their way to stamp out liberal uprisings outside their borders in the middle 19th century.
