As far as the Middle East goes, we ally with Israel because they, politically, are the only ones remotely similar to the US/Europe. It wouldn't make sense for the US to ever fully ally with a country like China, especially a few decades ago, because they have different political beliefs to us and will provide competition for resources in the long run.
