Is the veneration of saints a form of polytheism?
No.
Yes. Catholics worshipping a canon of saints instead of God is polytheism.

Veneration means honouring. It doesn't mean worship.

The Bible mentions nothing about canonizing saints or veneration. It does say to worship God directly.

Seeing how the saints were often introduced explicitly to replace the worship of pagan gods, yes. Of course it is.
Christianity synchronises elements of dualism and polytheism, because Indo-Europeans found the nation of an omnipresent unitary God too alien to adopt as is.

In catholicism yes because everything about catholicism is basically pagan. In real Christianity no, because 'saint' is just another term for a believer in Christ, and veneration of saints -- the brothers of the Church -- is a veneration of Christ.

The Bible also tells how Paul was told to build a church, I'm pretty sure Jesus wouldn't have had that happen if he thought it could be so fundamentally corrupted
