Why is not considered it's own continent?
What difference does it make?

It's a sub continent. It used to be its own continent and then it smashed into and fused with Eurasia a fuck billion years ago. That's my best guess.

we are shown the continents we see floating but what about all the ocean crust?

Continents are based more on convention than any particular standard. The world doesn't even believe how many continents they are. The Anglosphere considers North and South America to be two separate continents while the rest of the world considers them to be one.
I personally prefer that model. This being said I think there is something metaphysical about the division of continents (namely Africa, Europe and Asia) that we can't easily comprehend.
