That image is obviously from an illuminated manuscript, which explains eveything about how it looks. Illuminated manuscripts were often made with engravings of gold and silver, in order to make important images shiny (it's where the "illumination" means) and give them emphasis. Silver in those books often oxidizes and turns black, because that's what happens when silver gets old. What you're seeing in that image was originally a shiny, silver Jesus that's blackened because of age.
