Japan of the 16th century, despite being an island, wasn't really a naval power. Most of their "warships" were just fishing or trade ships pressed into military service, with maybe a few cannons stuck on, if that. Naval tactics centered around closing quickly and boarding, where their army could carry the day instead of their seamanship.
At Myeongyang, the Koreans were able to position their fleet in a relatively narrow strait where the current ran against the direction that the Japanese wanted to go, making it very difficult to close and board. And unlike the Japanese, the Koreans bet hard on cannon arming their ships and attempting to destroy enemy vessels from a distance.
Net result is that the Japanese could only kind of mill around uselessly and get shot until they broke and ran.

Panoskeons aren't turtle ships, they're much more conventional galleyish vessels.
