Gilles de Rais was most likely innocent. Many fellow nobles were jealous of his wealth and fame gained in war against the English. He was probably slandered and falsely accused for every single despicable thing they could come up with, including sorcery and witchcraft.

Other than that, he was a brave knight who aided Jean d'Arc in her campaigns.

It's safe to say it varied from case to case. For example a 30 yo man fucking a 7 yo girl would be seen as immoral and deviant, but a 12 yo girl marrying an 18 yo guy would be accepted.
