Considering sermons where in Latin and most people did not own a bible or read. Was the bible itself sort of a hidden knowledge that priests gave snippets to to the masses but only they were ones in the know about the bible and theology?
Was 'folk Christianity' a massively different thing from the 'official' Christianity of the clergy?

Yes, folk Christianity is a bit different from the "official" version for all intents and purposes.
Tbh it's the same for every religion or belief system. If you take an area and observe its history every religion preceding it influences the current religion in that area

Yes, the limitation of the fact that you had to know Latin was not really an issue, as early protestants simply made personal pamflets and proclamations about their own analysis of the Bible instead of translating the whole thing(until Luther did).
So, basically, the printing press allowed even a semi wealthy merchant to sell his services to a semi wealthy religious nut to stamp out hundreds of pamflets telling people what is right what is wrong with the Bible or the Church.
This caused a fuckton of problems, because of course it did.

You need to understand that the church was integrated into every day life. Festivals, get together, etc would all take place around the church. This isn't 21st century America where you go to church on Sunday and don't think about. Church was deeply intertwined with the social fabric of communities, towns and villages.

Even the original protestants were heavily geared towards educated clergy decided what the "correct" biblical interpretation was.

No they weren't. Even the readings were being translated before or after the mass, and before the sermon. Decades and centuries following the Trident Council led to all Low Masses with presence of the people having readings directly in national languages (when there's no sermon).
