northern mexico is the most developed part of the Nation apart from Mexico city. that has a lot to do with the many mines found around the north.
the cities of the south west would probably be smaller, and las vegas, as we know it, would most likely would never exist

the U.S. would have probably never had a civil war, as most people who fought in it agree the states and territories won in the Mexican war led directly to the civil war

the Mormons would have populated much of the further northern parts of mexico as they had planned. maybe the would have rebelled at some point, but Mexico had no problem with them and it seemed the feeling was mutual
indians like the comanche, apache, navajo would have won some form of autonomy in Mexico because as the Mexican army was never able to fight them off completely, but they lacked enough power and population to become fully independent
the Texas rebellion would have been crushed. there was no logical reason for it not to be in real life, their ware several rebellions in mexico, all having to do with people hating Santa Anna, and it was the only rebellion to have succeeded, Santa Anna was a fucking idiot.

It's still astonishing to me that Spain/Mexico never even SURVEYED California. They didn't even have records of mega-features like Mt. Shasta. They had no idea that gold was sitting right on streambeds in the Sierras.
They didn't even make a small feint at understanding what their own purported "territory" contained. They never even sent a handful of explorers to map it all out.
Given those facts, they deserved to lose what they never properly claimed.
