Having a college degree in anything on your resume will open up a lot of opportunities. It lets companies know that you were responsible/smart/ambitious enough to graduate.

This. Most employers only require that you have a degree. What it's in doesn't matter. This is the truth for the vast majority of jobs out there, and probably every one that OP will even think about going after. What's important in looking for a job is knowing how to market yourself.
