J Riley-Smith is a very good historian who primarily wrote about the Crusades

I have never seen anyone use so many primary historical sources on the internet.
There is a book called 'Extraordinary Popular Delusions and the Madness of Crowds' by Charles Mackay.
The whole book is fucking fantastic from the perspective of analyzing great sociological phenomenon and how conflict and trends start. I am very religious, and the book has an anti-religious tone, so this was kind of offputting, but other than that it is interesting historically.

Start with the crusaders. I know it's a good meme to trash primary sources for some reason but the are entertaining.
Rene Grousset if you read French, except for the passage about Frederick II that should be entirely ignored. It was written at a time of hostility between France and Germany and you can feel it.
Joshua Prawer is very interesting too, and sometimes contradicts Grousset in his presentation of the crusader kingdoms.
