While Yi Sunshin's prowess shouldn't be underestimated there were limits to what he could accomplish with his naval forces(Japanese forces could still traverse the Korean strait albeit with some difficulty).
The Ming intervention secured the legitimacy of the ruling dynasty as well as forcing the Japanese to parley.
Yi absolutely crushed Japan every chance he had; there is little to dispute.
However, he didn't win the war by himself, obviously. China, alongside the battered Korean army (and irregulars) seriously put down Japan's advance on land.
In addition, the court back in Japan, after years of war, was starting to implode and collapse on itself so there was also political and economical reasons for Japan to turn back and run.
