Modern day Persia/Iran hasn't really experienced a major ethnic change in it's history, even the Mongols/Timurids didn't spend enough time to drastically change the ethnic makeup moreso than they just conquered and demanded tribute. Only major shift was the Arab conquest, but even then the difference between Iranians and Arabs is pretty noticeable even today.
They probably looked little different than they do now. Same with a lot of regions. Just because an area was conquered didn't immediately mean mass genocide of the natives and repopulation with the conquering party, that's way too much effort for most empires.
