Say the Axis powers won WW2. Could they hold on their conquest or would they collapse?

They couldn't have won WW2.

There are degrees of "win". The Nazis only could have won by the USSR collapsing and then making white peace with the British, and even then they'd be stuck with endless guerrilla warfare in their new lebensraum.
Japan conquering all of China, or either Japan or Germany invading and taking over the Americas, is absurd.

They would never be stupid enough to attempt to take over such a vast amount of territory, it'd be unsustainable. Constant rebellion and guerrilla warfare would tear them apart. .

the germans never even had a program to develop the a bomb, they were trying to develop industrial nuclear power so they could stop using coal power plants and convert as much coal to oil as possible. Industrial nuclear power and nuclear weapons are two completely different technologies, and it would take years after the discovery of one to transition to the other.
Additionally they had no delivery method for a nuclear weapon.
