China and India for a tie in interesting.
India for convoluted, since they were 10's of independent countries for most of their existence, while disunity in China was frequent, but far less than India.
China is better in everyhing there ever is was or will be.

Personally I think Chinese history and culture is more interesting overall but India's religions are super neat

This. India's history is not only disunified, but before Islam it's also badly recorded and largely just put together from inscriptions on temples and accounts of foreign observers. China is a series of dynasties, even when it's disunified it's easy to understand where everything is and what's going on. In India it's a clusterfuck of kingdoms, tribes, semi-independent vassal dynasties, castes and religious sects constantly moving around, expanding and contracting, appearing and disappearing, with nobody really keeping track of anything that's going on.
Medieval/Early Modern Europe is the only place nearly as convoluted, but at least Europe's history is well recorded.
