I thought the Chinese just copied European cannons
Supposedly Europeans could build better canons due to superior European bell technology, of all things.

Your pic is neither chinese nor european.
Europe was exposed to cannon technology in the 13th century, a combination of technology brought by the Mongols and further development by the Muslims in their inferno of a war with each other.
By 1400 Europe may have been on par with China. By 1500 they may have been a little ahead. Though this is up to debate.
By 1600 Europe had an apparent advantage, the few ships that could make it as far as China had an advantage pound for pound, though this may have more to do with ship building than the cannons themselves.
By 1700 this advantage had widened to the point that would make sinoboos look silly trying to defend it.

Tell me more about old timey cannons?
What makes one more advanced than others? I thought that until self contained cartridges and rifling they were all just big metal tubes that contained one way explosions.

Maybe in the ruling class, but that doesn't ring true for the average person. The population of Anatolia is mostly genetically the same as it always was. Turks in Turkey are much much closer to Armenians and Georgians than they are any other Turkics in Central Asia.

When the Ottomans rolled their cannons across the Propontis
Tell me about siege-tunnels. Were they actual tactic, or were there only one or two occasions that spawned the meme?
