Why was Islam so much more 'progressive' 1000 years ago, especially relative to Europe.

Because most of the problems of modern Islam stems from Western powers purposely fucking with Wahhabism and Arab tribalism in the 20th century.

It wasn't, it was simply a minority religion over most of its territory. Most of the figures of the "Islamic"golden age were non-muslims or heretics of one kind or another, in later periods they would have been "corrected" by orthodox islam and so never produce anything of worth.
As to why islam is so anti-thought, it has to do with the doctrine known as "occassionalism", which basically posits that there are no such things as natural laws, that everything that happens is directly willed by god, and that as a result looking for patterns in nature is not only futile, but blasphemous.
The Abbasid Caliphs during the Islamic Golden Age cared more about knowledge than converting people to a strict interpretation of Islam. In this quest for knowledge they built many universities and colleges where anyone can join and become a scholar. They also preached about the right to believe in anything you want if it didn't infringe on other people's rights.

I think the Mongol invasions ended up converting more people to Islam (the Mongols themselves) than killing them, but of course there's the fire, pillage, and rape that comes with it. They stopped roughly at Baghdad, right? That's an important city, but it could've been worse.
