Were the coolies really so triggered over animal fat? I can understand Mohammedans being vicious pearl clinchers but Hindus as well?

Wasn't it specifically cow fat?

It used Cow and Pig fat according to the rumor. Anyway that thing was just the spark. The mutiny was going to happen eventually, there was just too many conflicting interests between the British and those of the Subcontinent. The British got lucky that many Indians(Even the Sikhs who they had only recently conquered) were loyal.
The sepoys were paid like shit and treated like shit.
It was only a matter of time before something happened.

We have a new (polymer-based) £5 note and many vegetarian restaurants refuse to take it because an animal fat is involved somewhere in the manufacturing process.

That was the lot of all soldiers in all armies at that time. Most armies didn't even have permanent barracks before 1870s and only the luckiest lived in dugouts. European-led soldiers were at least paid, Qing armies for instance were expected to make living by plundering the countryside.
