Well if you'd ever even looked inside a Bible you'd see all kinds of little annotations that reference prophecies in the OT that Jesus fulfills in the NT

Maybe he was only referring to relevant law and prophecies, and the early christian authors exaggerated what he said.

Jesus, like every new Prophet, fundamentally changed the way people thought about some of the foundational principles of Judaism. Mohammed did the same thing with Christianity. And the next prophet will change it yet again.
