Nobody said official. And green is mentioned numerous times in the Quran. It's the color of clothing Muhammad wore and the color of clothing he said people wore in Paradise. Color symbolizes life and vegetation. Of course a bunch of desert people were obsessed with the color green.
Your logic of official doesn't make sense. Muhammad isn't the official name of the Prophet, but that's doesn't mean it isn't what the majority of Muslims call him.

Islam doesn't have a representative color. Yes, green is significant but it doesn't signify Islam itself in any way. Just like how dates are the most cited food in the Quran and Hadith doesn't imply dates are the "food of Islam". Green had a lot of uses back then; the most commonly accepted one was that it represented nature, life and fertility amidst the desert. It also represented balance, and a path to water (in the desert greenery would signify water sources - also why Sharia means "path to water" literally).
Yes, Muhammad is said to have worn green as did his companions. But his people migrated in all white, his armies wore blacks and whites and the first five caliph flags were all white (see: Black/White Standard).

Just because it isn't official doesn't mean green isn't a significance in islam. Ask any Muslim what color would best represent Islam.
