mehmed the conqueror was easily the greatest ruler of late medieval history
not only was he fluent in turkish, arabic, persian, greek, italian, serbian(and probably a few other languages) but he also knew engineering, mathematics, war theory. when he took constantinople he ordered the library to be translated to arabic(which was the science language of east at the time) immediately and even worked with multiple european scholars. he wrote poems(like most ottoman rulers) and knew both islamic and christian theologies(he used the orthodox church against the latins)
his grand plan wasn't to conquer in the name of islam but was to reunite rome under his empire. he was even planing to invade the italian peninsula, take rome and end the schism before he was poisoned
mehmed the conqueror was easily one of the greatest rulers of all times and the only reason why you would underestimate such a man would be because he was turkish

You say he dreamed of ending schisms, Augustus didn't dream, he did. He took a corrupt and divided republic and, despite all opposition against him, left it a flourishing empire that ushered in an age of relative peace and stability for the Mediterranean for 200 years. I don't know about you, but that sounds much more impressive then ending the misery of a decrepit empire and earning the butthurt of the balkans for half a millennium.
